Dairy Free Pancakes

2 Cups flour

4 tsp. baking powder

1/2 tsp. salt

2 T. sugar

2 cups water

3 T. oil

1/4 tsp. vanilla extract

1. Sift dry ingredients; add remaining ingredients and beat together

2. Pour batter to form circles approximately 4 inches in diameter onto a hot, lightly greased griddle or heavy skillet 

3. Cook for 2 to 3 minutes or until pancakes have a bubbly surface and slightly dry edges

4. Turn pancakes; cook for 2 to 3 minutes more or until golden brown
